Years ago, I used to follow a super delicious sausage casserole recipe that I believe was on The BBC Good Food website. Unfortunately with it being years ago, I can no longer find it.
But it had a tablespoon of jam or similar to caramelise the onions. It was also quite quick to make. So here, I'm sharing you my new creation with that concept in mind as I believe it makes the best sausage casserole, ever.
And with it being a cold Winter's day, I had a hankering to make with with a sweet and spicy twist. The answer for this was Branston Pickle!

How To Make Branston Pickle Casserole
Firstly, you'll find a printable list of sausage casserole ingredients in a card further down this page. But the Branston Pickle sausage casserole sauce is very simple to make. All it requires is searing the best quality sausages you can buy and adding the remaining vegetables and seasoning.
You'll find all the ingredients in the recipe card below. It's also beneficial to use a cast iron casserole dish and oven safe pan directly on the hob.
Now preheat your oven at 180 degrees. Meanwhile, once everything has caramelised nicely, add the remaining ingredients and bring to a boil.

Thickening Sausage Casserole Sauce Tips
Now add the Branston pickle sausage casserole in the oven for 30 minutes without the lid. However, if you prefer a thicker sauce, you could:
- Continue to cook until it reduces down
- Spoon out 2 tablespoon of the sausage casserole sauce and leave to cool for a minute in a glass jug. Then mix in a tablespoon of plain flour before pouring back in, stirring and simmering for 5 minutes on the hob. Repeat if it's not thick enough
- Cheat and stir in gravy granules
- Or add 13g of porridge oats when adding the stock before cooking in the oven, which will thicken and disintegrate in the pot

Does This Need To Be an Oven Sausage Casserole?
No, it's not essential to cook this pickled sausage casserole in the oven. You can also cook it in a slow cooker for 3-4 hours on high or 6-7 on low.
But it is important to sear your sausages first, otherwise you might have a sausage stew where they fall apart in the pot.

Instant Pot Sausage Casserole With Branson Pickle
For another one pan wonder, you can also cook it in a pressure cooker, such as the Instant Pot or Tefal Cook4Me.
To cook your sausage casserole, sear and fry all of the ingredients in the multi cooker pot. Then cook on a pressure cooking method for 25 minutes.
Once done, simmer with extra plain flour if desired. See thickening notes above.

What To Eat With Sausage Casserole
We ate ours as a Slimming World sausage and mash meal. But you can also eat it with:
- Mashed carrot or suede
- Pureed cauliflower
- Crushed potatoes
- Hasselback potatoes
- Brown rice
- Crusty bread like damper bread
- Baked beans
- Steamed greens, such as broccoli, green beans, kale, etc
- Yorkshire puddings to dunk
- Jacket potato

What is Branston Pickle?
For my readers that don't live in the UK, a Branston Pickle recipe is a chunky sweet and tangy brown sauce, cooked with diced carrot, cauliflower, onions, etc.
Branston pickle ingredients make the perfect condiment on sandwiches, such as a "Cheese and Pickle sandwich". If you want to know what it tastes like, when describing it to an American reader, he said it sounded like Steak Sauce.
Note: I used smooth Branston pickle because I had it. You could also use chunky, small chunk pickle or a:
- Ploughman's pickle recipe
- Smoky BBQ sauce
- HP Brown sauce
- Or any sweet and spicy sauce or a chutney

Sausage Casserole With Branston Pickle
This is one truly comforting sweet and spicy sausage casserole with Branston Pickle as the main star of the show. It's the perfect family recipe to hit the spot.
Ingredients
- 1 tablespoon olive oil
- 8 pork sausages
- 2 onions, halved and sliced
- Sea salt and black cracked pepper
- 1 carrot, peeled and diced
- 2 tablespoon Branston Pickle (I used smooth)
- 1 teaspoon wholegrain mustard
- 100g garden peas
- 200g mushrooms, sliced
- 1 tablespoon red wine vinegar
- 1 beef stock cube
- 1 tablespoon Worcestershire sauce
- ½ teaspoon basil (dried)
- ½ teaspoon rosemary (dried)
- ½ teaspoon thyme (dried)
- Pinch of coarse red pepper (optional)
- 400ml water
- 1 tablespoon plain flour *optional
Instructions
- Preheat the oven at 180c fan / 200c conventional oven / 400F or Gas Mark 6
- Sear the sausages in cooking oil until browned. *Use cooking oil spray and low fat sausages if making a Slimming World sausage casserole.
- Add the onions and seasoning and slowly saute until softened.
- Then add the Branston pickle and herbs and continue to cook slowly until caramalised for about 10 minutes.
- Then add everything except the stock and continue to fry and stir for another 5 minutes.
- Now add the remaining ingredients except the flour and bring to a boil.
- Then pop in the oven for 30 minutes.

- Serve with mash or whatever you fancy and enjoy!
Notes
1. To thicken, spoon out 2 tablespoon of the sausage casserole sauce into a glass jar and leave for a minute to cool.
