An incredibly tasty, yet easy cheesy bacon and chorizo bread soup recipe. Uses stale bread of your choice, toasted in the oven, and stirred into a creamy yet chunky peasant-style dish.

Hello! Did you catch my recent boat York trip on Twitter recently? Well, if not, we finally gained the courage to travel on the River Ouse from the Selby lock and ended up spending two nights in York.
We moored up in front of the Museum Gardens, did a LOT of shopping and met up with friends, who coincidentally, gave us the gift of BREAD!
It wasn't any ordinary bread. It was The Shamble's Bluebird Bakery's 7 Seed Sourdough bread, which we initially indulged with hummus and croutons on salad. And the following day, I was inspired to create what I'm about to share with you. A delicious poor man's (sort of), bacon and cheese bread soup.

What Bread Should I Use?
You can use whatever bread you like! But because we'll be adding moisture to soften the bread, it makes it one of the best stale bread recipes to use it up!
It doesn't have to be artisan bread like this. You can opt for cheap white bread instead. And if you don't have stale bread, then not to worry as we'll dry it our and bake in the oven.
However, while baking stale bread, I like to give it a toss of olive oil and seasoning first for extra flavour.

Tips For Batch Cooking
If you're batch cooking, then really, it's best to only stir in the bread as and when you're about to eat it. But in reality, I'm a "chuck it all in and deal with it later" kind of girl.
At this point, once you've reheated it, the bread obviously loses its crunch. And instead, results in a thicker soup, which is also yummy.

Equipment I Used

You'll find that while cooking on a narrowboat, I aim for fuss-free family recipes that require very little equipment due to limited space. Here's all I used:
- Chopping board
- Chopping knife
- Saucepan
- Spatula
- Measuring cup (or a jug and kitchen scales)
- Baking tray
- Baking paper or sometimes silicone baking mats
- Ladle

Alternative Ingredients
If you'd like a lighter consistency, then you don't need to add double cream (AKA heavy cream). I just love the extra creaminess it gives.
Instead, you may prefer it as it, or even cook with some shredded cabbage.
Making It More Italian
For some extra Italian depth, why not saute minced garlic while you're cooking your onions? The only reason I avoid cooking with garlic while touring the canals is that you'll often meet new people.
I don't want to kill them with garlic breath during a daytime meal. Unless it's evening time and we're moored up for the night!

How to Make Bread Soup Recipe
Cheesy Bacon & Chorizo Bread Soup
An incredibly tasty, yet easy cheesy bacon and chorizo bread soup recipe. Uses stale bread of your choice, toasted in the oven, and stirred into a creamy yet chunky peasant-style dish.
Ingredients
- 3 tablespoon olive oil (1 is for toasting bread)
- 1 onion, diced
- 2" chorizo, finely diced (30g)
- 1 cup sliced mushrooms (70g)
- 1 cup bacon, raw, chopped (250g)
- 3 courgettes, diced
- 4 cups water (900ml)
- 2 chicken stock cubes
- Knob of butter (25g)
- ¾ cup double cream (heavy cream), 180ml
- 2 thick slices of bread (from a Granary cob)
- 1 cup grated cheddar cheese
- Salt and pepper to taste
- Parsley (garnish)
- 1 tablespoon extra virgin olive oil (garnish)
Instructions
- Preheat the oven on gas mark 2.
- In a large saucepan, saute the diced onions in 2 tablespoon of olive oil with a pinch of salt and pepper.
- Then add the chopped bacon and chorizo and fry until the bacon has started to golden.
- Throw in the mushrooms and courgettes and stir while frying until the courgettes start to soften.
- Add everything else to the pot except the bread, cheese, cream, butter, parsley and oils and simmer while covered for 20-25 minutes.
- Cut the bread into large cubes and spread on a lined baking tray.
- Toss over the remaining olive oil and season well.
- Bake in the oven for 10-20 minutes until toasted.
- Remove the soup off the heat and stir in the final ingredients, including the toasted bread and serve!

Bread Notes
The choice of bread is up to you! We used a Bluebird Bakery 7 Seed Sourdough that was gifted to us by a friend in York, which made this bread soup extra special. But any fresh or stale is perfect.
Also note, it's best to eat it once cooked. Reheating it at a later date will result in a thicker soup. So if batch cooking, stir in your toasted bread as and when!
