What kinds of recipes on a narrowboat do you eat while you travel? Do you have a packed lunch ready on a boat? A flask of soup? Flask of tea or coffee to go with?
I wondered this last week while we buddied up with other narrowboaters doing staircase locks as it was much quicker. But if you're a solo boater, I can imagine if you're not prepared, you'll be caught out.
Anyway, if you need something that doesn't take too long and creates 4 portions, then say hello to my easy cauliflower and courgette soup. It made a great cup-a-soup and another dinner the following day with a sandwich on the side.
Easy Cauliflower Soup
No, you many not have a lot of appliances in a narrowboat kitchen due to space. Or, you don't want to use much power if you only have 12 volt, or your solar panels haven't got much sun.
I made 3 soups during the holiday. All of which didn't require a blender or any fancy tools.
You just need a chopping board, knife, a large sauce pan and a source of direct heat to cook on top.

Is This a Healthy Cauliflower and Zucchini Soup?
The term healthy has many definitions to different people. If you're following a low fat, then I recommend you trying my Slimming World cauliflower cheese soup instead.
If you agree with recent studies that low fat diets aren't sustainable, which often rely of carbs, then this is healthy.
I too follow a keto (low carb, higher protein and fat) diet and have been losing weight. Although the sandwich below staring you in the face is my husband's!) I started following this kind of diet after listening to Dr Michael Mosley's Fast 800 Audible audiobook, which I highly recommend!

How to Make Easy Cauliflower Courgette Soup
Cauliflower and Courgette Soup (Keto, Creamy & Chunky)
A low carb, keto diet, creamy and chunky cauliflower and courgette soup that is so delicious! No need for a blender!
Ingredients
- 1 tablespoon olive oil
- 1 head of caulflower, chopped
- 1 onion diced
- 1 courgette (zucchini), diced
- 1 tablespoon oregano
- Salt
- Pepper
- 700ml water (3 cups)
- 2 vegetable stock cubes
- 200ml double cream (¾ cup)
- 150g cheddar cheese, grated
Instructions
- Heat the oil in a large saucepan and sauté the onions.
- Add the courgettes and cauliflower, herbs and spices and continue frying for 5 minutes.
- Add everything else except the cheese and cream and simmer for 15-20 minutes until softened.
- Stir in the cheese and cream until melted and enjoy!
