A delicious and easy chunky courgette and cheese soup that requires little effort - just a few gentle presses with a potato masher. It's also low carb and Keto friendly and similar to Käsesuppe, a German cheese soup.

While holidaying on our narrowboat, I created a few easy soups that we could eat to travel with, like this courgette mozzarella soup. I've also since created it again as a courgette and vintage cheddar soup!
In fact, they made the perfect homemade "cup of soups so my husband could eat while driving the tiller on the boat. I've also had a few questions as to how I've lost weight over the last year. And it's simple.
I've ditched a low fat, high carb diet and become more rigid with my exercise morning routine. Beach Body on Demand*, to be more precise. And eating a low-carb diet I find rather easy. Especially when I can enjoy full-fat cheeses and creams in my diet, like this cheesy courgette soup. Let me show you how I made it.

What Makes This an Easy Courgette Soup?
When you're cooking on a narrowboat, you have limited space. This also means limited tools. And some may not have plug sockets for a blender, or simply want to reserve energy if your solar panels haven't stored much power on a cloudy day.
Often you'll find a courgette and potato soup recipe that's creamy. Others are roasted courgette soup. But I designed this soup for minimal effort, no fuss. And no need for a blender in the kitchen.
You just need to chop and fry some vegetables, simmer for a bit, then a few presses with a potato masher. By the time the courgettes have gone mushy and I've added cheese and some cream, it becomes a creamy AND chunky texture I love.

Storing Courgettes With Limited Space
While we were away for 11 days, I didn't have room for all of my courgettes. I probably took about 20 with me as I don't eat carbs.
Note, when I buy fresh and can't immediately refrigerate them, they do keep well for about 5 days in a cool dark place.
If stored in a really cold fridge that keeps freezing at the back, avoid them touching as they will go soft when in contact. I tend to trim these bits off and discard them in a worst-case scenario.

How To Make Courgette Soup
Courgette and Cheese Soup (Keto & Chunky)
A delicious and easy chunky courgette and cheese soup that requires little effort - just a few gentle presses with a potato masher. It's also low carb and Keto friendly and similar to Käsesuppe, a German cheese soup.
Ingredients
- 3 tablespoon olive oil
- 5 courgettes (zucchini), diced
- 1 onion, diced
- 1 clove garlic minced
- Pinch of sea salt
- Pinch of black pepper
- 2 tablespoon orgegano
- 2 beef stock cubes (or vegetarian/vegan if required)
- 700ml water (3 cups)
- 200g mozzrella (grated or chopped)
- 200ml double cream (optional)
Instructions
- Heat the oil in a large saucepan and sweat the onions and garlic.
- Transfer in the courgettes, salt, pepper, oregano and continue to fry over medium heat until they've started to soften.
- Add everything else except the cheese and cream if using and simmer while covered for about 15 minutes.
- Gently press the courgettes with a potato masher to break them down a bit - I gave about 10 presses to make it a thicker soup
- Stir in the cheese, (and optional double cream) until the cheese has melted, and serve!
Notes
Smooth Courgette and Cheese Soup Option
You can blend until smooth if desired, but this was made on a narrowboat with just a potato masher without the need to use a plug socket. Also, sometimes it's good to give your stomach something to break down.
Alternative cheeses
This courgette soup was first made with created with mozzarella as that's what we had left in the fridge, then updated with vintage cheddar. It gives lovely lumps of cheese throughout once melted and each bite is a surprise. You could of course use other cheeses that melt well, such as:
- Cheddar
- Blue cheese
- Soft cream cheese
Why This is Keto and Not Low Fat
I'm so over low-fat, high carb recipes as they are scientifically proven to not work long term. That's why this doesn't have potatoes in it. Instead, the broken courgettes and cheese are enough to give a thicker consistency without affecting the blood sugar level.

This soup was absolutely wonderful! I didn't have any double cream, so I whipped cottage cheese and added it. It worked great! It maybe added a hint of tanginess, but it worked. I will definitely make this again.
