Welcome back to yet another narrowboat recipe! I'm just in love with the fact I can travel while cooking in a kitchen at the same time.
It's rather novel compared to our kitchenette in the camper van. And it's legal 😂 Anyway, you may have noticed, I love my veggies. And soups, in fact.
But, with limited space and no dishwasher, I make more one pan recipes. Just like this broccoli and cheese soup recipe I made for our boat trip to York. I hope you enjoy too!

How to Make One Pot Broccoli Cheddar Soup
Keto Broccoli Cheese Soup Recipe (Chunky)
A deliciously easy chunky keto broccoli cheese soup recipe. Using a whole head of broccoli and no potato, this fuss-free recipe is the perfect one pan wonder in small space, cooked on a narrowboat to minimize on washing up!
Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 1 broccoli head, chopped
- 700ml water
- 2.5 chicken stock cubes
- ½ tablespoon mustard powder
- Salt
- Pepper
- 10g butter
- 150ml double cream
- 3 handfuls mature cheddar (grated)
Instructions
- Saute the onions in olive oil, seasoned with salt and pepper.
- Add the broccoli florets and fry for a further 3 minutes.
- Add water and stock, cover, and simmer for 22 minutes until the broccoli has softened and has started to break down.
- Stir in the cheese and double cream.
- Simmer for 2-3 minutes before serving.
